The Birth of a Unique Merienda

Chef Xavier's journey into the world of culinary innovation began with his quest to find a fresh twist on the beloved halo-halo. Having grown tired of the usual offerings, he sought inspiration from various provinces, tasting and studying different versions of the dessert. This dedication led to the creation of Halo-Halo de iLoco, which launched on May 18, 2004. Chef Xavier's goal was to encapsulate the flavors of La Union in a single, unique dish.

The Innovative Fried Halo-Halo

Fried halo-halo might sound unconventional, but it promises a delightful experience. Chef Xavier uses the same ingredients found in traditional halo-halo, such as sticky rice cooked in coconut milk and carabao's milk, sweetened banana, corn, coconut strips, tapioca pearls, mountain rice, cheese, and nata de coco. These ingredients are wrapped in a lumpia wrapper, sealed with egg white, and deep-fried until golden brown. The final touch includes toppings of caramelized sugar cane, yema, ube crackers, ice cream, cheese, and honey, creating a unique blend of textures and flavors.

Okoy Tikyosko: The Perfect Pairing

Complementing the sweet fried halo-halo is Okoy Tikyosko, a savory shrimp fritter. This dish combines shrimp with a batter of eggs, rice flour, seasonings, squash, malunggay (moringa), and sweet potatoes. The mixture is deep-fried to perfection, resulting in a crispy exterior and a tender, flavorful interior. The combination of salty okoy and sweet fried halo-halo, with the addition of a tangy vinegar dip, creates a harmonious balance perfect for any merienda.

His background in Mass Communication didn't deter him from pursuing his passion for cooking, a skill he attributes to his late grandmother. He fondly recalls learning to cook by her side, a foundation that inspired his culinary career.

Starting with a modest investment of P25,000, Chef Xavier's venture has grown exponentially. Today, his daily earnings range from P70,000 on weekdays to over P100,000 on weekends. His success story is not just about financial gain but also about making a positive impact. Chef Xavier employs persons with hearing impairments, providing them with opportunities and training, including sign language workshops.
