Pork Belly or what we call "Liempo,"
Sliced Onions
Lemon, which serves as an alternative ingredient for calamansi.
Garlic
Soy Sauce
Brown Sugar
Ground Black Pepper
Cooking Oil
Water
Let's start cooking!
First, Sauté. Heat the cooking oil, and immediately add the onions. Do not use all the onions at once; use about one-fourth of the total amount. Then, add the garlic.
As usual, continue sautéing until the onions become soft. After that, add the pork belly or liempo. Sauté the pork until the outer part turns light brown.
Once it turns light brown, it is better to cook it a bit longer with the onions and garlic. This helps enhance the flavor of our dish.
Next, add the soy sauce. When we say "bistek," it includes soy sauce and usually calamansi. If you do not have calamansi, you can use lemon, alternative to calamansi.
You can also use lime. Let it boil for a while. Cover the pot and reduce the heat to low to medium. Let it simmer for about 15 minutes.
The pork will cook in the soy sauce and release its own juices. After 15 minutes, check it.
Add a little water. Continue simmering on low heat until the pork becomes tender. The cooking time depends on the quality of the pork you are using.
If the pork is good, it might only take about 30 minutes to become tender. However, if the pork is not of high quality, it might take up to an hour or more. So, please check accordingly.
If the pork is not yet tender but the liquid has reduced, you can add more water. If our pork is tender. Add brown sugar.
It is up to you if you want to add sugar. Stir it well and let it cook until the liquid reduces by half.
Do not cover the pot. Season it with ground black pepper. Then, add the remaining onions.
Stir it well and cook for another 5 minutes. After that, transfer it to a serving bowl and serve.
